There's a Sriracha shortage again. Why? The hot sauce has a cult following all over the world. It was invented back in 1949 by a woman named Tanam Chakpa in the town of Sriracha, Thailand. Made from Chili Peppers, vinegar, garlic, sugar, and salt, the sauce was a huge hit. So she bottled it up for sale. Then, in 1983, it appeared in the bottle we've all become familiar with when Vietnam-born David Tran opened his company, Hui Fong Foods, in California. A problem, it is a challenging crop to grow. Jalapenos are really labor-intensive, requiring people to de-stem them by hand before they go for processing. Climate change has made matters worse. Northern Mexico is experiencing a drought, and the chili peppers grown there rely on water from the Colorado River, which U.S. farms have first rights to. That leaves Mexican farms especially vulnerable to drought and super fans of the green-topped brand Furious. As for now, Sriracha lovers might have to settle for their second choice brand.
