If you heat up oil in pan, then you put chili into oil, the chili gonna burn.

But the other way around, if you put oil into chili, then you're gonna cook the chili without burning it.

Bring out more flavor. (foreign language) I think she's searing like that to get rid of moisture.

Okay. So in that case searing without oil okay. I remember with Jamie Oliver making pad Thai, he tried to sear some ingredient with no oil.

So he called it, what, like dry frying. This not that, okay? This one she doing it on purpose and later, you po mian, she gonna pour oil on it.

So that's gonna be oil already. Jamie Oliver when he dry frying, it's not because he's trying to bring out flavor. It's because he's trying
to sell non-stick pan.

In traditional you po mian,
very simple ingredient. Just like spring onion, red
pepper, some sort of vegetable.

When a cooking show judge is trying to eat more of your food, you know you've made something good.

Usually cooking show judges, they just take one small bite. It's like they're so scared the food is poison. (foreign language) Mm, whipping cream adds air bubbles into it.

He whips the cream to mix with the chestnut puree. (foreign language) That's the face Uncle Roger makes when Uncle Roger realizes Uncle Joshua is cooking with Auntie Esther behind my back.
