Hello, this is a delivery startup tip. Today, I would like to talk about shop-in-shop. Many people think of franchise delivery stores when it comes to shop-in-shop. I personally run six private brands. I started with a Chinese restaurant, but I wanted to develop other menus as well. As the sales decreased behind the scenes due to only having delivery stores, I started creating brands that could utilize the same ingredients during idle times. Eventually, I ended up running six different brands. Initially, when I operated only the Chinese restaurant, I thought it would be difficult to expand and operate various brands together, so I couldn't start simultaneously. However, I separated Tangsuyuk, a dish from the menu, added Kimchi, and made it into a separate brand. I also added a few sauces to the crispy fried chicken and created a new brand called Dakgangjeong.

Creating a brand and operating it was not difficult. If the menu is developed and photos are added, it's time to start a business. Let me talk about the advantages and disadvantages of a wireless shop-in-shop. Firstly, sales and profits increase. Naturally, when running two instead of one store, the sub-brand may not have as high sales, but even if you make only 5 dishes a day instead of 3, and even if it adds only 100,000 won in daily sales, it amounts to around 2.5 million won in monthly sales. Additional sales come out due to the increase in profit rate, as fixed costs such as rent, labor, and utilities remain the same. This leads to an increase in profit percentage, enabling more efficient store operations. Secondly, the turnover rate of ingredients improves. Running a restaurant, the most important things for me are the quality and freshness of the ingredients.

Through creating common ingredients for shop-in-shop, the freshness and turnover of vegetables and meat, which are important, have significantly increased. Thanks to this, we can use better vegetables and meat, reduce waste, and improve the quality of food. The third point is the stability in the store. When operating only one menu, there are times when orders come in a lot for a specific menu and there are quiet times. However, by operating various brands, orders come in evenly regardless of the time slot, which can increase sales even during off-peak hours. Also, when using just one store, it becomes sensitive to negative reviews, and depending on the demand on certain days or seasons, there may be some anxiety about sales. However, by operating multiple stores, if sales decrease in one place, they can be compensated for in another.

Covering definitely gave me some mental stability. If I may point out some disadvantages, additional time and cost are incurred. When opening a chain shop, you need to manage sharks, so you have to manage the menu and reviews separately in the app. You also need to put in advertisements, which means additional costs for flags every month. Of course, you can eliminate the cost by running the business without flags, but you need to accumulate reviews to smoothly receive orders in the early stages. Therefore, some time and cost are involved in managing the store in the early stages. These aspects are challenging to handle during busy times, so it's better to prepare during the off-season when the weather is nice, like bears preparing for hibernation, to make a big hit in the peak season. In our store, two people are in charge of six.

We operate as a shop-in-shop, and since most of the ingredients are common and do not require complex or diverse materials and recipes, we operate comfortably. Additionally, there is no additional cost to register a new shop, so you can open it comfortably. If the sales are not effective or the business is not doing well, you can close the new shop without much risk, so it might be worth trying at least once. If you are very busy and profitable with just one shop, you may not need to add a shop-in-shop. However, if the sales are a bit low or if there is idle time in the store, by making a little more effort to eliminate this labor ratio, adding a shop-in-shop can create a more efficient profit structure for the same rent and labor costs. Personally, I highly recommend it. Especially if it is not a franchise shop-in-shop, but directly operated.

If you decide to open and run a shop, you won't need to separately receive ingredients and can purchase them cheaply yourself to do business, which is very advantageous. In shops that only do delivery, it is more beneficial to experience Shop-in-Shop. Therefore, instead of staying still during the off-season when deliveries decrease, I think it would be great to prepare more for the upcoming peak season.
